Confetti Chicken Chowder

Last night I made this soup and it was soooo good. I wanted to make something light for dinner but I wanted something that had some substance to it too.

So before I go on here is the recipe:

Confetti chicken chowder

1/4 cup margarine
1/2 cup chopped onion
1/2 cup all purpose flour
6 cups chicken broth
2 cups chopped, cooked chicken
1 10oz package frozen chopped spinach, thawed and drained
1/4 teaspoon nutmeg
1 cup half and half

In a large saucepan melt margarine over medium heat. Add onion; cook and stir for 2 to 3 minutes or until tender. Stir in flour; cook and stir for 1 minute. Stir in broth; cook and stir until thickened and bubbly. Add chicken, spinach, and nutmeg. Stir in half and half, heat through.
Serves 6 292 calories.

Sorry I didn't take a photo of if, but it was really good. The best part was that I could eat it and use it as an entire meal. With the spinach, onion, and chicken it filled me up well as much as 3/4 of a cup could.

I am still measuring my portions. I am finding that different things are effecting me differently. Thankfully this soup was a good one.
